Description

A simple yet flavorful Italian pasta dish made with garlic, olive oil, and chili flakes.

Ingredients

Scale
  • 400g spaghetti
  • 6 cloves garlic, sliced
  • 1/2 cup extra virgin olive oil
  • 1 tsp red pepper flakes
  • Salt, to taste
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes.
  3. Sauté until the garlic is golden brown, being careful not to burn it.
  4. Once the spaghetti is done, reserve 1 cup of pasta water, then drain the spaghetti.
  5. Add the drained spaghetti to the skillet and toss to coat in the garlic oil.
  6. If the pasta seems dry, add a little reserved pasta water to moisten.
  7. Season with salt to taste and remove from heat.
  8. Garnish with chopped parsley and serve with grated Parmesan cheese, if desired.

Notes

For a variation, add some sautéed vegetables or cooked shrimp for added flavor and texture.
