Muffins:

  • ¾ cup (180ml) fresh apple cider (reduced to ¼ cup)

  • 1¾ cups (219g) all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¾ tsp salt

  • 2 tsp ground cinnamon

  • ¼ tsp ground allspice

  • ¼ tsp ground cloves

  • ¼ tsp ground nutmeg

  • ½ cup (113g) vegetable oil or melted coconut oil

  • ½ cup (100g) light or dark brown sugar

  • ½ cup (100g) granulated sugar

  • 2 large eggs, at room temperature

  • ¼ cup (60g) unsweetened applesauce

  • 1½ cups (210g) peeled and shredded apple (1.52 apples)

  • ¾ cup (90g) chopped walnuts (optional)

Topping:

  • 2 Tbsp (28g) melted unsalted butter

  • ½ cup (100g) granulated sugar

  • 1½ tsp ground cinnamon



Instructions

  1. Reduce apple cider: Simmer ¾ cup fresh apple cider in a saucepan until reduced to ¼ cup. Let cool.

  2. Preheat oven to 425°F (218°C). Line or grease a 12-count muffin tin.

  3. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, and all spices.

  4. Mix wet ingredients: In another bowl, whisk oil, both sugars, eggs, applesauce, and reduced cider.

  5. Combine mixtures and fold in shredded apple and walnuts (if using).

  6. Divide batter evenly between muffin cups, filling to the top.

  7. Bake at 425°F for 5 minutes, then reduce oven to 350°F and bake for another 15–16 minutes.

  8. Cool for 10 minutes, then transfer muffins to a wire rack.

  9. Make topping: Brush muffins with melted butter and roll in cinnamon-sugar.

Notes

  • Use fresh apple cider, not vinegar or alcoholic cider.

  • Muffins can be frozen for up to 3 months.

  • No applesauce? Sub with mashed banana, yogurt, or sour cream.
