  • 3 cups (255g) old-fashioned rolled oats

  • 1 tsp baking powder

  • 1½ tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • ½ tsp pure vanilla extract

  • ¼ tsp salt

  • 1 heaping cup (120g) peeled, chopped apple

  • Optional: ½ cup (50g) chopped walnuts or pecans

  • Optional: Coarse sugar for topping


Instructions

  1. Preheat oven to 350°F (177°C). Lightly grease a 12-count muffin pan with nonstick spray.

  2. In a large bowl, whisk milk, eggs, maple syrup, applesauce, and vanilla until combined.

  3. Stir in oats, baking powder, cinnamon, nutmeg, and salt.

  4. Gently fold in chopped apples and optional nuts.

  5. Spoon the mixture evenly into muffin cups, filling to the top. Sprinkle with coarse sugar if desired.

  6. Bake for 28–30 minutes, until set and lightly golden.
