Description

Crumb Topping:

  • 1/3 cup (67g) packed brown sugar

  • 1 tbsp (15g) granulated sugar

  • 1 tsp ground cinnamon

  • 1/4 cup (56g) unsalted butter, melted

  • 2/3 cup (84g) all-purpose flour

Muffins:

  • 1¾ cups (219g) all-purpose flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp ground cinnamon

  • ½ tsp salt

  • ½ cup (113g) unsalted butter, softened

  • ½ cup (100g) brown sugar

  • ¼ cup (50g) granulated sugar

  • 2 large eggs

  • ½ cup (120g) yogurt or sour cream

  • 2 tsp vanilla extract

  • ¼ cup (60ml) milk (any kind)

  • 1½ cups (180g) peeled and chopped apples

Optional Vanilla Icing:

  • 1 cup (120g) confectioners’ sugar

  • 3 tbsp (45ml) heavy cream or milk

  • ½ tsp vanilla extract


Instructions

  1. Preheat oven to 425°F (218°C). Line or grease a muffin pan.

  2. Make crumb topping: Mix sugars and cinnamon, then stir in melted butter. Add flour and gently toss with a fork. Set aside.

  3. Whisk dry ingredients: flour, baking soda, baking powder, cinnamon, and salt.

  4. Cream butter and sugars. Add eggs, yogurt, and vanilla. Beat until creamy.

  5. Add dry ingredients and milk to wet mixture. Mix until just combined. Fold in apples.

  6. Spoon batter into muffin cups. Add crumb topping, pressing gently.

  7. Bake at 425°F for 5 minutes, reduce to 350°F and bake 15–18 more minutes.

  8. Cool muffins. Drizzle icing if using.

 


Notes

Use crisp apples like Honeycrisp or Granny Smith for best texture.

For dairy-free, substitute plant-based milk, yogurt, and butter.

Freeze without icing for up to 3 months. Add icing after thawing.
