  • 2/3 cup (160g) unsweetened applesauce (reduced to 1/3 cup)

  • 2 cups (170g) old-fashioned rolled oats

  • 1 1/4 cups (156g) all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground allspice

  • 1/4 tsp ground nutmeg

  • 1/2 cup (113g) unsalted butter, softened

  • 1/2 cup (100g) granulated sugar

  • 1/2 cup (100g) dark brown sugar

  • 1 egg yolk, room temperature

  • 1 tsp pure vanilla extract

  • 3/4 cup (90g) finely diced apples

  • 1/2 cup (63g) chopped walnuts (optional)

Maple Icing

  • 2 tbsp (28g) unsalted butter

  • 1/3 cup (80ml) pure maple syrup

  • 1 cup (112g) sifted confectioners’ sugar

  • Pinch of salt, to taste


Instructions

  1. Reduce applesauce in a saucepan over medium heat until halved (about 10 minutes). Cool.

  2. Preheat oven to 350°F (177°C). Line baking sheets with parchment or silicone mats.

  3. In a bowl, whisk oats, flour, baking soda, salt, cinnamon, allspice, and nutmeg.

  4. In another bowl, cream butter, granulated sugar, and brown sugar for 5 minutes.

  5. Add cooled applesauce, egg yolk, and vanilla to creamed mixture. Beat until combined.

  6. Add dry ingredients to wet. Mix in apples and optional walnuts.

  7. Scoop dough (1.5 tbsp) onto baking sheets, spaced 3 inches apart.

  8. Bake 14–16 minutes until edges are golden. Cool on sheet for 10 minutes, then transfer to a rack.

  9. For icing: melt butter and maple syrup. Remove from heat and whisk in sugar and salt. Drizzle over cooled cookies. Icing sets in 1 hour.

Notes

  • Chill dough for 30 mins to reduce spread.

  • For vegan cookies: use plant-based butter and a flax egg.

  • Freeze baked cookies or unbaked dough balls for up to 3 months.
