Ingredients
Apple Filling:
2 tbsp unsalted butter
8 cups (about 7) peeled and sliced apples (Granny Smith + Honeycrisp)
3 tbsp packed brown sugar
1 tbsp fresh lemon juice
1 tbsp all-purpose flour
1½ tsp ground cinnamon
¼ tsp ground allspice
¼ tsp ground nutmeg
Topping:
6 tbsp unsalted butter, melted
1 cup granulated sugar
1 cup buttermilk
2 tsp vanilla extract
1¾ cups all-purpose flour
2 tsp baking powder
½ tsp salt
Optional: 1 tbsp sugar + ½ tsp cinnamon (for sprinkling)
Instructions
Preheat oven to 350°F (177°C). Lightly grease a 9×13-inch baking dish.
Pre-cook apples: In a saucepan, melt 2 tbsp butter. Add apples, brown sugar, lemon juice, flour, and spices. Cook for 5 minutes, stirring. Transfer to baking dish.
Make topping: Whisk melted butter and sugar. Add buttermilk, vanilla, flour, baking powder, and salt. Stir until mostly smooth.
Spread topping over apples. Sprinkle cinnamon sugar and swirl lightly with a knife.
Bake 48–55 minutes or until golden and bubbling. Cover loosely with foil if browning too quickly.
Let cool 5–10 minutes before serving. Serve warm with ice cream or caramel sauce if desired.
Notes
Use a mix of tart and sweet apples for best flavor.
Recipe can be halved in an 8-inch square or 9-inch round pan.
Store leftovers in the fridge for up to 5 days.
Reheat in microwave or 300°F oven.
Freeze cooled cobbler for up to 3 months.
