Ingredients

  • 4 cups (500g) all-purpose flour (spooned & leveled)
  • 1 and 1/2 teaspoons salt
  • 1 teaspoon granulated sugar
  • 1 and 3/4 cup (396g) unsalted butter, very cold and cubed
  • 3/4 cup (180ml) very cold ice water
  • 1 large egg, lightly beaten with 1 Tablespoon (15ml) milk (for egg wash)
  • Optional: Coarse sugar for sprinkling on top
  • 10 cups peeled and chopped apples (about 45 lbs)
  • 2/3 cup (135g) granulated sugar
  • 1/4 cup (31g) all-purpose flour
  • 2 Tablespoons (30ml) fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup (90g) confectioners’ sugar, sifted
  • 2 Tablespoons (30ml) pure maple syrup
  • Milk or heavy cream to thin the icing

Instructions

  1. Prepare the Pie Dough: In a large bowl, mix flour, salt, and sugar. Add cold butter and blend until the mixture resembles coarse meal. Gradually drizzle in ice water until large clumps form. Refrigerate for at least two hours.
  2. Make the Filling: Combine chopped apples, granulated sugar, all-purpose flour, lemon juice, vanilla extract, cinnamon, cloves, and nutmeg in a bowl.
  3. Preheat the Oven: Set your oven to 375°F (190°C).
  4. Roll Out the Dough: Roll out the first disc into a rectangle (18×13 inches) and fit it into a 10×15-inch jelly roll pan.
  5. Fill the Pie: Spread the apple filling evenly over the crust.
  6. Top the Pie: Roll out the second disc of dough, draping it over the apples, crimping the edges to seal, and cutting slits for venting. Brush with egg wash and sprinkle sugar if desired.
  7. Bake the Pie: Bake for 40-46 minutes until the crust is golden and filling is bubbly. Cool on a wire rack.
  8. Make the Maple Icing: Whisk together confectioners’ sugar, maple syrup, and enough milk or cream for drizzle consistency.
  9. Finish and Serve: Drizzle icing over cooled pie, cut into slices, and enjoy!

Notes
