Ingredients
Donuts:
1 cup (125g) all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 large egg (room temperature)
1/3 cup (65g) packed light brown sugar
1/4 cup (60ml) milk (any kind)
1/4 cup (60g) yogurt (plain or vanilla, Greek or regular)
2 tbsp (28g) unsalted butter, melted
1½ tsp pure vanilla extract
Topping:
1 cup (200g) granulated sugar
1 tsp ground cinnamon
1/2 cup (113g) unsalted butter, melted
Instructions
Preheat oven to 350°F (177°C). Grease a donut pan with non-stick spray.
Mix dry ingredients: In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Mix wet ingredients: In a large bowl, whisk egg, brown sugar, milk, and yogurt. Add melted butter and vanilla; whisk until smooth.
Combine: Add dry ingredients to wet and mix until just combined. Do not overmix.
Pipe batter: Transfer batter to a zip-top bag, snip the corner, and pipe into donut pan cavities, filling each 2/3 full.
Bake for 9–10 minutes or until edges are golden. Let cool in pan 2 minutes, then transfer to a wire rack.
Top: While still warm, dip each donut in melted butter, then roll in cinnamon sugar to coat. Serve immediately.
