- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1 cup brown sugar
- 3/4 cup unsalted butter, softened
- 1/4 cup molasses
- 1/4 cup maple syrup (or vegan substitute)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
- Mix in the molasses, maple syrup, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Chill the dough in the refrigerator for at least 1 hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the dough on a floured surface and cut into desired shapes with cookie cutters.
- Place cutouts on the baking sheet and bake for 10-12 minutes or until the edges are firm.
- Remove from the oven and let cool on a wire rack before dusting with powdered sugar or decorating.
Notes
These cookies can be frozen for up to 3 months. For a firmer cookie for decorating, bake 1-2 minutes longer.
