Description

These cookies feature a rich, nutty brown butter flavor and are made with gluten-free flour, resulting in chewy cookies with crispy edges and melty chocolate pockets.


Ingredients

  • 3/4 cup unsalted butter
  • 1/2 cup granulated sugar
  • 3/4 cup dark brown sugar, packed
  • 1 egg + 1 egg yolk, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon unsulphured molasses
  • 1 3/4 cups Bob’s Red Mill gluten free 1 to 1 baking flour
  • 1/2 teaspoon fine sea salt
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup semisweet chocolate chunks
  • 1/2 cup semisweet chocolate chips
  • Flaky sea salt, for topping

Instructions

  1. Brown the butter by melting it in a medium skillet over medium-low heat. Whisk constantly until it turns golden and you see brown specks in the pan. Let it cool for about 8 to 10 minutes.
  2. In a medium bowl, whisk together gluten free flour, salt, baking powder, and baking soda. Set aside.
  3. Add both sugars to the cooled brown butter in the mixer bowl. Mix on medium speed until smooth, about 1 minute. Add the egg, egg yolk, vanilla, and molasses, mix until the dough comes together.
  4. Gradually add the dry ingredients to the mixer on low speed until just combined. Fold in chocolate chunks and chips.
  5. Cover the dough and chill in the refrigerator for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop the dough onto the sheet, spacing about 3 inches apart.
  7. Bake for 13 to 14 minutes until the edges are golden. Sprinkle with flaky sea salt while warm and let cool for 5 minutes before transferring to a wire rack.

Notes

For a soft bite-sized treat, reduce bake time by 2-3 minutes. Store cookies in an airtight container at room temperature for up to 3 days.
