Description
A quick and easy blueberry sauce topping that enhances desserts and breakfasts with fresh berry flavor.
Ingredients

- 1/3 cup (80ml) warm water
- 1 tablespoon (15ml) fresh lemon juice
- 1 and 1/2 teaspoons cornstarch
- 2 cups (1 pint; 280g) fresh or frozen blueberries
- 2 tablespoons (25g) granulated sugar
- 1/2 teaspoon pure vanilla extract
Instructions
- Whisk together the cornstarch, warm water, and lemon juice until dissolved and set aside.
- In a small saucepan, warm the blueberries and sugar over medium heat, stirring continuously for 3 minutes while gently smashing the berries to release their juices.
- Add the cornstarch mixture to the pan and stir for another 2–3 minutes until the sauce thickens.
- Remove from heat and stir in the vanilla. Allow to cool before serving.
- Store in the refrigerator for up to 1 week or freeze for longer storage.
Notes
If the sauce gets too thick after refrigeration, microwave for 15 seconds or warm on the stove to thin it out.
