For the Apples:

  • 2 cups (240g) peeled, chopped apples (about 2 medium apples)

  • 2 tbsp (30g) pure maple syrup or brown sugar

  • 1/8 tsp ground cinnamon

For the Blondies:

  • 1 cup (226g) unsalted butter, cut into 16 pieces

  • 2⅓ cups (291g) all-purpose flour

  • 1½ tsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • 1⅔ cups (330g) packed light or dark brown sugar

  • 2 large eggs, at room temperature

  • 1½ tsp pure vanilla extract

For the Icing:

  • ¼ cup (56g) unsalted butter, browned and reserved

  • 1½ cups (180g) confectioners’ sugar

  • 2 tbsp (30ml) milk

  • ¼ tsp vanilla extract

  • Pinch of salt


Instructions

  1. Brown the Butter: In a light-colored skillet over medium heat, melt all butter. Stir constantly for 5–8 minutes until golden brown and fragrant. Pour into a heatproof bowl, scraping all brown bits. Reserve 3 tbsp for icing.

  2. Cook the Apples: In the same skillet, sauté chopped apples with maple syrup and cinnamon over medium heat for 3–5 minutes until slightly softened. Set aside.

  3. Preheat Oven: Preheat to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper.

  4. Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.

  5. Mix Wet Ingredients: In another bowl, whisk browned butter (minus reserved 3 tbsp), brown sugar, eggs, and vanilla. Combine with dry ingredients, then fold in apples.

  6. Bake: Spread batter into pan. Bake for 35 minutes or until a toothpick comes out with a few moist crumbs. Cool completely.

  7. Make the Icing: Melt reserved browned butter if solid. Whisk with confectioners’ sugar, milk, vanilla, and salt. Adjust thickness with more sugar or milk.

  8. Finish & Serve: Drizzle icing over cooled blondies. Cut into squares and serve.
