Description

Soft, lightly spiced cookies made with dark brown sugar that hold their cut-out shapes well, perfect for decorating for any occasion.


Ingredients

Scale
  • 2 and 1/4 cups (281g) all-purpose flour (spooned & leveled), plus more as needed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • Pinch each: ground ginger & ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) packed dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • Royal Icing, Easy Glaze Icing, or Cookie Buttercream for decoration
  • Assorted sprinkles (optional)

Instructions

  1. Whisk the flour, baking powder, cinnamon, allspice, ginger, nutmeg, and salt together in a medium bowl. Set aside.
  2. In a large bowl, beat the butter and brown sugar on high speed until smooth and creamy, about 3 minutes.
  3. Add the egg and vanilla, beating until combined.
  4. Mix in the dry ingredients on low speed until combined; if too soft, add flour 1 tablespoon at a time.
  5. Divide the dough in half, roll to about 1/4-inch thickness between floured parchment paper, and chill for at least 1-2 hours.
  6. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Cut shapes from the chilled dough, re-rolling scraps as needed, and bake for 11-12 minutes until edges are lightly browned.
  8. Cool on sheets for 5-10 minutes, then transfer to a wire rack to cool completely before decorating.

Notes

Dough can be made ahead and frozen. Decorated cookies can be stored up to 5 days at room temperature. If using buttercream, cover and store decorated cookies at room temperature for 1 day, or in the refrigerator for up to 5 days.
