- Homemade pie crust
- 7 cups (around 1225g) peeled chopped peaches, cut into 1-inch chunks
- 1/2 cup (100g) packed light or dark brown sugar
- 1/2 cup (63g) all-purpose flour or 1/4 cup instant tapioca
- 2 teaspoons fresh lemon juice
- 1/4 teaspoon ground cinnamon
- 1 teaspoon ground cinnamon for topping
- 3/4 cup (94g) all-purpose flour for topping
- 5 tablespoons (71g) unsalted butter, melted and slightly cooled
- Optional: 1/2 cup (63g) chopped walnuts
Instructions
- Prepare the pie crust according to your recipe up to step 5.
- In a large bowl, combine chopped peaches, brown sugar, flour or tapioca, lemon juice, and ground cinnamon.
- Preheat your oven to 400°F (204°C).
- Roll out the chilled dough to a circle approximately 12 inches in diameter.
- Carefully place the rolled-out dough into a 9-inch pie dish.
- Spoon the peach filling into the crust, leaving excess liquid behind.
- In a medium bowl, mix brown sugar, cinnamon, and flour for the topping, then stir in melted butter and walnuts until crumbly.
- Sprinkle the crumble over the peaches.
- Place the pie on a baking sheet and bake for 20 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-35 minutes.
- Allow the pie to cool for 3 hours at room temperature before serving.
Notes
Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
