Delicious caramel apple cheesecake bars featuring soft apples, creamy cheesecake, and sweet caramel on a crunchy graham crust, perfect for fall gatherings.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups apples, peeled and diced
- 1 cup caramel sauce
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
- In another bowl, beat together the cream cheese, sugar, and vanilla until smooth. Add eggs, one at a time, beating well after each addition.
- Fold in the diced apples and cinnamon. Pour the cream cheese mixture over the crust in the baking pan.
- Drizzle caramel sauce over the top of the cheesecake layer and use a knife to swirl it gently.
- Bake in the preheated oven for 40-45 minutes, or until the center is set and doesn’t jiggle.
- Allow to cool, then refrigerate for at least 4 hours before slicing into bars and serving.
Notes
For best results, chill the bars for at least 4 hours before slicing. Serve with ice cream or a drizzle of warm caramel.
