Description

These gingerbread cookies are soft, chewy, and full of warm spice, perfect for snacks or holiday sharing.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup molasses

Instructions

  1. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. In another bowl, cream together butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and molasses until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Chill the dough in the refrigerator for at least 1 hour.
  6. Preheat your oven to 350°F (175°C).
  7. Roll the chilled dough into small balls and place them on a baking sheet.
  8. Bake for 8-10 minutes, or until the edges are firm but the centers are soft.
  9. Allow to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

For softer cookies, place a slice of bread in the storage container. Dough can be frozen for up to 3 months.
