Instructions
- Preheat the oven to 350°F (175°C). Grease a bundt pan with butter and flour.
- In a large bowl, cream together the butter and sugar until fluffy.
- Add eggs one at a time, mixing well.
- Stir in buttermilk, vanilla extract, rum extract, and peppermint extract.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and ground ginger.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared bundt pan.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
- Dust with powdered sugar and top with festive decorations as desired before serving.
Notes
The cake can be stored at room temperature for up to 3 days, or frozen for longer storage. Allow it to come to room temperature before serving for best texture.
