Description

Festive, colorful pinwheel cookies with buttery, chocolatey flavors that are easy to make and perfect for the holidays.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • Food coloring (red and green)

Instructions

  1. In a mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  2. Add in the egg, vanilla, and almond extract, and mix well.
  3. In a separate bowl, combine flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Divide the dough in half. Leave one half uncolored and add food coloring to the other half to create your desired colors.
  5. Roll each colored dough between two sheets of parchment paper into rectangles about 1/4 inch thick.
  6. Stack the colored rectangles on top of each other, then roll them up tightly into a log shape.
  7. Wrap the log in plastic wrap and refrigerate for at least 2 hours.
  8. Preheat your oven to 350°F (175°C).
  9. Slice the chilled log into 1/4 inch thick rounds and place them on a baking sheet lined with parchment paper.
  10. Bake for 8-10 minutes until the edges are lightly golden.
  11. Let cool before serving, and enjoy your festive cookies!

Notes

Store baked cookies in an airtight container for up to 5 days. For longer storage, freeze in a freezer bag for up to 2 months.
