Description
These chubby gingerbread men are soft, a little chewy, and bursting with warm spices. Fun to make with kids and perfect for the holidays!
Ingredients

- 1 1/2 cups (195g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground all-spice
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, room temperature
- 1/2 cup (100g) dark brown sugar, packed
- 1/4 cup (60mL) unsulphered molasses
- 1 teaspoon pure vanilla extract
- 1/2 cup (65g) powdered sugar
- 1/2 tablespoon heavy cream or milk
Instructions
- In a medium bowl, whisk together flour, baking powder, cinnamon, ginger, all-spice, cloves, and salt to combine. Set aside.
- In a large bowl, cream together butter and brown sugar until light and fluffy.
- Whisk in the molasses and vanilla to combine.
- Add the dry ingredients and fold together until a smooth dough forms. Chill if the dough is too sticky.
- Line a large baking sheet with parchment paper.
- Portion dough into balls: 1 tablespoon for the body, 1 teaspoon for the head, and 4 half-teaspoon portions for arms and legs.
- Arrange the balls on the baking sheet in gingerbread man shape, lightly squishing them together.
- Freeze for 10-15 minutes.
- Preheat oven to 350°F (175°C).
- Bake for 13-17 minutes until puffed and shiny surface has dulled.
- Cool for 10 minutes on the baking sheet, then transfer to a wire rack to cool completely before icing.
- For icing, whisk powdered sugar and heavy cream until thick, adjusting consistency as needed. Decorate cookies as desired.
Notes
Chill dough if it’s sticky for easier shaping. Adjust icing thickness with powdered sugar or cream.
