  • 1 teaspoon baking powder

  • 1 cup (226g) unsalted butter, melted and slightly cooled

  • 1¾ cup (350g) packed light or dark brown sugar

  • 1 large egg + 1 egg yolk

  • 1 tablespoon (15ml) pure vanilla extract

  • 1 cup (80g) sweetened shredded coconut

  • 1 cup (180g) dark or semi-sweet chocolate chips


Instructions

  1. Preheat oven to 350°F (177°C). Grease or line a 9×13-inch baking pan with parchment, leaving an overhang.

  2. In a large bowl, whisk together flour, baking powder, and salt.

  3. In another bowl, whisk melted butter and brown sugar until combined. Add egg, egg yolk, and vanilla; whisk until smooth.

  4. Combine wet and dry ingredients. Stir until just combined. Fold in coconut and chocolate chips.

  5. Spread batter evenly into the pan.

  6. Bake for 35 minutes or until a toothpick inserted comes out mostly clean.

  7. Cool completely in the pan before cutting into bars.

Notes

For extra coconut flavor, toast shredded coconut before adding to batter.
