Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) packed light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • 6 ounces (170g) bittersweet chocolate, coarsely chopped
  • 3/4 cup (105g) dried cranberries
  • 1/2 cup (55g) sliced, slivered, or chopped almonds

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, cornstarch, cinnamon, and salt. Set aside.
  2. In a large bowl, beat the softened butter and both sugars together until smooth and creamy, about 2 minutes. Add the egg and vanilla, mixing until combined.
  3. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  4. Add the chopped chocolate, dried cranberries, and almonds, mixing until evenly distributed.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 2 hours or up to 4 days.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Scoop the dough into balls about 1.5 tablespoons in size and place them on the baking sheets, spacing them 3 inches apart.
  8. Bake for 11-13 minutes until the edges are lightly browned and the centers appear soft.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For a nut-free version, omit almonds or substitute with sunflower seeds. You can also mix in rolled oats for extra texture.
