Description

Irresistible dark chocolate truffles infused with the tanginess of key lime pie.


Ingredients

Scale
  • 3/4 cup (180ml) heavy cream
  • Zest of 2 limes
  • 14 ounces (395g) white chocolate, coarsely chopped
  • 1 Tablespoon (15ml) fresh lime juice
  • 2 Tablespoons (28g) unsalted butter, softened
  • 18 ounces (509g) bittersweet chocolate, coarsely chopped
  • Optional: 4 ounces (113g) white chocolate, coarsely chopped
  • Optional: a few green candy melts

Instructions

  1. Heat the cream and lime zest in a saucepan over medium heat until just about to boil. Remove from heat and infuse for 30 minutes.
  2. In a heatproof bowl, combine chopped white chocolate, lime juice, and softened butter. Set aside.
  3. Reheat the lime-infused cream, simmering it again, then strain it over the white chocolate mixture.
  4. Stir until smooth, cover with plastic wrap, and let sit at room temperature for 1 hour.
  5. Refrigerate for 5-6 hours or overnight until firm enough to scoop.
  6. Scoop the ganache, roll into balls, and place on lined baking sheets. Refrigerate.
  7. Melt bittersweet chocolate and dip each truffle. Return to the baking sheets.
  8. Optionally, melt white chocolate and candy melts, drizzle over truffles, and let set at room temperature for at least 1 hour.

Notes

Use fresh limes for best flavor. Store truffles in an airtight container for up to two weeks or freeze for three months.
