Description
Irresistible dark chocolate truffles infused with the tanginess of key lime pie.
Ingredients

- 3/4 cup (180ml) heavy cream
- Zest of 2 limes
- 14 ounces (395g) white chocolate, coarsely chopped
- 1 Tablespoon (15ml) fresh lime juice
- 2 Tablespoons (28g) unsalted butter, softened
- 18 ounces (509g) bittersweet chocolate, coarsely chopped
- Optional: 4 ounces (113g) white chocolate, coarsely chopped
- Optional: a few green candy melts
Instructions
- Heat the cream and lime zest in a saucepan over medium heat until just about to boil. Remove from heat and infuse for 30 minutes.
- In a heatproof bowl, combine chopped white chocolate, lime juice, and softened butter. Set aside.
- Reheat the lime-infused cream, simmering it again, then strain it over the white chocolate mixture.
- Stir until smooth, cover with plastic wrap, and let sit at room temperature for 1 hour.
- Refrigerate for 5-6 hours or overnight until firm enough to scoop.
- Scoop the ganache, roll into balls, and place on lined baking sheets. Refrigerate.
- Melt bittersweet chocolate and dip each truffle. Return to the baking sheets.
- Optionally, melt white chocolate and candy melts, drizzle over truffles, and let set at room temperature for at least 1 hour.
Notes
Use fresh limes for best flavor. Store truffles in an airtight container for up to two weeks or freeze for three months.
