Description

A simple recipe for warm, spicy gingerbread cookies with soft centers and slightly firm edges, perfect for any occasion.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate bowl, cream the butter and brown sugar until light and fluffy.
  4. Add in the molasses and egg, mixing well.
  5. Gradually add the dry ingredients to the wet ingredients until combined.
  6. Roll the dough into balls and place them on a baking sheet lined with parchment paper.
  7. Bake for 8-10 minutes until the edges are firm.
  8. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For a softer cookie, chill the dough before baking. For crispier cookies, flatten the dough balls slightly.
