Description

Cozy cookies that mix warm gingerbread spices with smooth coffee notes and creamy white chocolate, perfect for the holidays.


Ingredients

  • 2 cups (170g) old-fashioned whole rolled oats
  • 1 and 2/3 cups (210g) all-purpose flour (spooned & leveled)
  • 2 teaspoons espresso powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
  • 1 cup (200g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 1/4 cup (60ml/75g) unsulphured or dark molasses
  • 8 ounces (226g) white chocolate, chopped
  • 1 teaspoon vegetable oil or coconut oil (optional)
  • 1/2 teaspoon espresso powder
  • Pinch of cinnamon and nutmeg, for sprinkling on top

Instructions

  1. Pulse the oats in a food processor 10–12 times until you have a variety of texture—chopped oats with some oat flour.
  2. Whisk the pulsed oats, flour, espresso powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves together in a medium bowl. Set aside.
  3. In a large bowl, beat the butter, brown sugar, and granulated sugar until creamed, about 3 minutes. Add the egg and molasses and beat until combined.
  4. Add the dry ingredients to the wet ingredients and mix until combined. Cover and chill the dough for 30–45 minutes.
  5. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  6. Scoop dough onto baking sheets, placing them 3 inches apart. Bake for 12–13 minutes until lightly browned around the edges.
  7. Cool cookies on the baking sheet for 10 minutes, then transfer to a cooling rack.
  8. Melt white chocolate, oil, and espresso powder together. Dip each cookie halfway in the chocolate, sprinkle with spices, and refrigerate until set.

Notes

These cookies can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week. Freeze baked cookies (without chocolate) for up to 2 months.
