Description

Crisp, chewy treats combining the nostalgic flavors of classic rice krispie squares with warm gingerbread spice, perfect for a holiday snack.


Ingredients

  • 4 cups gluten-free crispy rice cereal
  • 1 cup almond butter or sunflower seed butter
  • 1/2 cup maple syrup or brown rice syrup
  • 1/4 cup coconut oil or vegan butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1 1/2 cups vegan marshmallows or syrup alternative (3/4 cup maple syrup and 1/4 cup water)
  • Optional mix-ins: 1/2 cup chopped pecans, 1/3 cup raisins or chopped dried figs, zest of one orange

Instructions

  1. Prepare an 8×8 or 9×13 pan by lining it with parchment. Set aside.
  2. In a medium pot, warm the nut or seed butter, maple syrup, and coconut oil over low heat. Stir until smooth and combined.
  3. Add spices—ginger, cinnamon, cloves, nutmeg—and salt to the warm mix. Stir for 30 seconds to bloom the spice flavors.
  4. If using vegan marshmallows, add them to the pot and stir as they melt into the syrup. If using the syrup-only option, mix syrup and water in a separate small pan and simmer until thickened, then mix with the nut butter blend.
  5. Turn off the heat and stir in vanilla.
  6. Add crispy rice cereal to a large bowl. Pour warm marshmallow or syrup mixture over the cereal. Quickly but gently coat all cereal with the sticky mix.
  7. Fold in any optional nuts, dried fruit, or orange zest.
  8. Transfer the coated cereal into the lined pan. Press down firmly but gently with a spatula to create an even layer.
  9. Let cool at room temperature for about 30 minutes or chill in the fridge for 15-20 minutes for faster setting.
  10. Lift the parchment and place the set slab on a cutting board. Cut into squares with a sharp knife.

Notes

Store in an airtight container at room temperature for up to 3 days or in the fridge for up to 7 days. For freezing, wrap each bar in plastic wrap and store in a freezer bag for up to 2 months.
