Description

A delightful cake packed with fresh apple chunks and topped with a sweet brown sugar glaze, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup vegetable oil
  • 1 cup yogurt or sour cream
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups chopped apples
  • 1/2 cup unsalted butter (for glaze)
  • 1 cup brown sugar (for glaze)
  • 1/4 cup heavy cream
  • 1 cup confectioners’ sugar (for glaze)

Instructions

  1. Preheat the oven to 325°F (163°C) and prepare a Bundt pan with nonstick spray.
  2. In a large mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk the vegetable oil, yogurt or sour cream, brown sugar, granulated sugar, eggs, and vanilla extract until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in the chopped apples.
  6. Pour the batter into the prepared Bundt pan and smooth the top.
  7. Bake for 55 to 75 minutes, checking for doneness with a toothpick.
  8. Allow the cake to cool in the pan before inverting onto a serving plate.
  9. For the glaze, combine butter, brown sugar, and heavy cream in a saucepan and bring to a boil.
  10. Remove from heat, whisk in the confectioners’ sugar, and pour over the cooled cake before serving.

Store leftovers at room temperature for up to 3 days or in the refrigerator for up to 5 days.
