- 1 teaspoon baking soda

- 3/4 cup vegetable oil
- 1 cup yogurt or sour cream
- 1 cup brown sugar
- 1 cup granulated sugar
- 3 large eggs
- 2 teaspoons pure vanilla extract
- 2 cups chopped apples
- 1/2 cup unsalted butter (for glaze)
- 1 cup brown sugar (for glaze)
- 1/4 cup heavy cream
- 1 cup confectioners’ sugar (for glaze)
Instructions
- Preheat the oven to 325°F (163°C) and prepare a Bundt pan with nonstick spray.
- In a large mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk the vegetable oil, yogurt or sour cream, brown sugar, granulated sugar, eggs, and vanilla extract until smooth.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Fold in the chopped apples.
- Pour the batter into the prepared Bundt pan and smooth the top.
- Bake for 55 to 75 minutes, checking for doneness with a toothpick.
- Allow the cake to cool in the pan before inverting onto a serving plate.
- For the glaze, combine butter, brown sugar, and heavy cream in a saucepan and bring to a boil.
- Remove from heat, whisk in the confectioners’ sugar, and pour over the cooled cake before serving.
