This healthy no-bake avocado cheesecake is a creamy, refreshing dessert packed with good fats and flavor—ready in just minutes with no oven required!
Ingredients
For the crust:
1½ cups crushed graham crackers or nuts
¼ cup melted coconut oil
For the filling:
2 ripe avocados
8 oz cream cheese (or vegan alternative)
⅓ cup maple syrup
¼ cup fresh lime juice
1 tsp vanilla extract
Pinch of salt
Instructions
Prepare the crust: Combine graham cracker crumbs and melted coconut oil. Press into a 9-inch springform pan and refrigerate.
Make the filling: In a blender, combine avocado, cream cheese, maple syrup, lime juice, vanilla, and salt. Blend until smooth.
Assemble: Pour filling over crust, smooth top, and refrigerate at least 4 hours.
Serve: Slice, garnish with berries or lime zest if desired, and enjoy!
Notes
Use vegan cream cheese for a fully dairy-free version.
Add 2 tbsp cocoa powder for a chocolate variation.
