- Buttery Flaky Pie Crust or All Butter Pie Crust
- 6–8 medium apples, cored, peeled, and sliced into 1/2-inch slices (approx. 8–10 cups, or 1–1.25kg slices)
- 2 Tablespoons (30ml) lemon juice
- 1/4 cup (31g) all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cardamom
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/8 teaspoon fresh ground black pepper
- 1/2 cup (100g) granulated sugar
- 1 teaspoon pure vanilla extract
- 1 Tablespoon (14g) cold unsalted butter, cut into small cubes
- 1 large egg, lightly beaten with 1 Tablespoon (15ml) milk
- Optional: coarse sugar for sprinkling
Instructions
- Prepare the Pie Crust: Follow the instructions for your preferred pie crust recipe until you reach step 5.
- Make the Filling: In a large bowl, combine the sliced apples with lemon juice, flour, all of the spices, sugar, and vanilla extract. Mix everything until the apples are coated.
- Preheat the Oven: Set your oven to 400°F (204°C).
- Roll Out the Dough: Roll out one of the dough discs into a circle about 12 inches in diameter and place it in a 9-inch pie dish.
- Add the Filling: Spoon the apple filling into the prepared crust, dot with cold butter.
- Top the Pie: Roll out the second dough disc to 12 inches, lay it over the filling and trim excess dough. Cut slits for steam vents and crimp edges.
- Prepare for Baking: Brush the top with egg and milk mixture and sprinkle coarse sugar, if desired.
- Bake the Pie: Bake at 400°F (204°C) for 20 minutes, then reduce to 375°F (190°C) and bake for an additional 30–35 minutes.
- Cool Before Serving: Let the pie cool for at least 3 hours at room temperature.
- Store Leftovers: Cover and store leftovers in the refrigerator for up to 5 days.
Notes
Best served warm with vanilla ice cream or whipped cream. Can be paired with caramel sauce or chopped nuts.
