Description

Easy, buttery, and irresistibly flaky turnovers filled with cinnamon‑spiced apple filling. These treats can be made using homemade or store‑bought puff pastry, chilled before baking for perfect shape, and topped with optional caramel for extra indulgence.

  • 2 cups (240 g) peeled & diced apples (≈2 medium apples)

  • ½ cup (100 g) granulated or brown sugar

  • 1 teaspoon ground cinnamon

  • 2 teaspoons pure vanilla extract

  • 1 teaspoon cornstarch

  • 1 large egg + 1 tablespoon milk (for egg wash)

  • ½ cup salted caramel (optional, for drizzling)

  • Optional additions: chopped pecans, raisins


Instructions

  1. Prepare dough: If using store‑bought puff pastry, thaw fully. If using homemade, refrigerate until cold.

  2. Make the filling: In a saucepan over medium heat, combine apples, sugar, cinnamon, vanilla, and cornstarch. Stir for 5 minutes, reduce heat, simmer 5 more minutes until thickened. Remove from heat and cool 20 minutes.

  3. Cut the dough: On a lightly floured surface, roll pastry into a 12‑inch square. Cut into 4‑inch squares (makes 8 using store‑bought, 9 using homemade).

  4. Fill & fold: Spoon 2–3 tablespoons of cooled apple filling onto each square. Fold to form a triangle and crimp edges with a fork.

  5. Chill: Place shaped turnovers on a baking sheet lined with parchment. Chill in refrigerator for at least 15 minutes (or up to 1 hour).

  6. Preheat & egg wash: Preheat oven to 400 °F (204 °C). Whisk egg + milk, brush on turnovers. Cut 2–3 small steam vents in the top of each.

  7. Bake: Bake for 23–25 minutes, rotating pans halfway through, until golden and puffed.

  8. Finish (optional): Let cool ~5 minutes, then drizzle with salted caramel before serving.

Notes

Freezing unbaked: After shaping, cover and freeze up to 1 month. Thaw in refrigerator, then bake.

Freezing baked: Let cool completely, wrap, and freeze up to 2 months. Reheat in oven for crispness.

To reduce leaks, don’t overfill and ensure edges are well crimped.

Use parchment or silicone mats to prevent sticking and promote crisp bottoms.
