- 2 cups (240g) graham cracker crumbs (about 16 full sheets)
- 1/2 cup (8 Tbsp; 113g) unsalted butter, melted
- 2 large egg yolks
- 2 Tablespoons (30ml) cold water
- 1 teaspoon gelatin
- 2 cups (480ml) whole milk
- 2/3 cup (130g) granulated sugar
- 3 Tablespoons (23g) all-purpose flour
- 6 ounces (170g) bittersweet chocolate, coarsely chopped
- 1 cup (240ml) heavy cream
- 1/4 cup (30g) confectioners’ sugar
- 1/2 teaspoon pure vanilla extract
- Optional: fresh berries, chocolate shavings, or fresh mint for topping
Instructions
- Preheat your oven to 350°F (177°C). In a mixing bowl, combine the graham cracker crumbs with the melted butter. Press tightly into a 9-inch pie dish. Bake for 8-10 minutes and let cool.
- In a bowl, whisk the egg yolks. In a saucepan, mix cold water and gelatin, allowing it to sit for 2 minutes. Add milk, sugar, and flour over medium-low heat, beating until dissolved.
- Temper the egg yolks by whisking in 1/4 cup of the warm mixture, then add back to the saucepan. Stir until thickened, then add the chopped chocolate and whisk until well combined.
- Pour the pudding into the crust, cover with plastic wrap, and allow to cool for 1 hour at room temperature before refrigerating for at least 4 hours.
- Beat the heavy cream, confectioners’ sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the chilled pie, adding optional toppings if desired.
- Slice and serve cold, enjoying the creamy filling and crunchy crust.
Notes
Store leftover pie covered in the refrigerator for up to 3 days. If topped with whipped cream, it’s best to serve fresh.
