Ingredients

  • 2 cups (240g) graham cracker crumbs (about 16 full sheets)
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, melted
  • 2 large egg yolks
  • 2 Tablespoons (30ml) cold water
  • 1 teaspoon gelatin
  • 2 cups (480ml) whole milk
  • 2/3 cup (130g) granulated sugar
  • 3 Tablespoons (23g) all-purpose flour
  • 6 ounces (170g) bittersweet chocolate, coarsely chopped
  • 1 cup (240ml) heavy cream
  • 1/4 cup (30g) confectioners’ sugar
  • 1/2 teaspoon pure vanilla extract
  • Optional: fresh berries, chocolate shavings, or fresh mint for topping

Instructions

  1. Preheat your oven to 350°F (177°C). In a mixing bowl, combine the graham cracker crumbs with the melted butter. Press tightly into a 9-inch pie dish. Bake for 8-10 minutes and let cool.
  2. In a bowl, whisk the egg yolks. In a saucepan, mix cold water and gelatin, allowing it to sit for 2 minutes. Add milk, sugar, and flour over medium-low heat, beating until dissolved.
  3. Temper the egg yolks by whisking in 1/4 cup of the warm mixture, then add back to the saucepan. Stir until thickened, then add the chopped chocolate and whisk until well combined.
  4. Pour the pudding into the crust, cover with plastic wrap, and allow to cool for 1 hour at room temperature before refrigerating for at least 4 hours.
  5. Beat the heavy cream, confectioners’ sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the chilled pie, adding optional toppings if desired.
  6. Slice and serve cold, enjoying the creamy filling and crunchy crust.

Notes

Store leftover pie covered in the refrigerator for up to 3 days. If topped with whipped cream, it’s best to serve fresh.
