Ingredients
1 ½ cups (360ml) heavy cream, half-and-half, or whole milk
2 heaping tablespoons (about 35g) pumpkin puree
2 tablespoons (30ml) pure maple syrup (adjust to taste)
1 ½ teaspoons pumpkin pie spice
2 cinnamon sticks
Instructions
In a small saucepan over medium heat, whisk together the cream (or milk), pumpkin puree, maple syrup, and pumpkin pie spice.
Add the cinnamon sticks and increase heat to medium-high.
Bring to a boil for 1 minute, whisking occasionally.
Remove from heat and let the mixture cool in the pan for 5 minutes.
Strain through a fine-mesh sieve if desired for smooth texture.
Transfer to a jar, refrigerate up to 1 week, and shake well before each use.
Notes
For a dairy-free version, substitute coconut, oat, or almond milk.
Adjust sweetness with more maple syrup or a sugar substitute.
