- 6 ounces (170g) pure white chocolate, coarsely chopped
- Food coloring: red, green, yellow, blue
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
- 6 ounces (170g) full-fat brick cream cheese, softened to room temperature
- 3 and 1/2 cups (420g) confectioners’ sugar
- 1 and 1/2 teaspoons pure vanilla extract
- Salt, to taste
Instructions
- Melt the white chocolate using a double boiler or microwave, stirring every 20 seconds to prevent seizing.
- Divide the melted chocolate into four bowls and add food coloring to each, stirring until fully incorporated.
- Spread the colored chocolate onto a baking sheet and chill for 15 minutes to set.
- In a large bowl, beat the softened butter and cream cheese on high speed until smooth and creamy.
- Gradually add confectioners’ sugar, mixing on low speed first, then high until fully incorporated.
- Add vanilla extract and a pinch of salt, adjusting to taste.
- Remove the set chocolate, chop it, and fold a handful into the frosting, reserving some for decoration.
- Store any leftover frosting or chips in the refrigerator.
Notes
For best results, ensure butter and cream cheese are at room temperature before mixing. The frosting can be customized by adding nuts, cocoa powder, or fruit puree.
