For the Karak Chai:
2 cups water
2 black tea bags (Assam recommended)
4–6 cardamom pods, crushed
1 cinnamon stick
2 saffron strands (optional)
½ cup sweetened condensed milk
1 tsp vanilla extract

16–18 ladyfinger biscuits
1 cup mascarpone cheese
2 egg yolks
¼ cup granulated sugar
½ cup heavy cream
Unsweetened cocoa powder (for dusting)
Instructions
Simmer tea bags, cardamom, cinnamon, and saffron in 2 cups of water for 10–15 minutes. Stir in condensed milk and vanilla. Let cool.
Whisk egg yolks and sugar until pale and thick.
Beat cream to soft peaks, fold in mascarpone, then combine with egg mixture.
Dip each ladyfinger in cooled chai and layer them in a dish.
Spread half of the mascarpone mixture on top. Repeat layers.
Cover and chill for 6 hours or overnight. Dust with cocoa before serving.
Notes
Use pasteurized eggs or whipped cream cheese for an egg-free version.
