- 1 cup graham cracker crumbs
- 2 tablespoons sugar
- 1/4 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- Toppings of your choice (e.g., fruit, chocolate, caramel)
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture into the bottom of a cupcake pan lined with cupcake liners to form a crust.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add sugar and vanilla extract, and mix until fully combined.
- Add eggs one at a time, mixing until just incorporated.
- Pour the cream cheese mixture evenly over the crusts in the cupcake pan.
- Bake for 18-20 minutes until just set.
- Let cool, then refrigerate for at least 2 hours.
- Add toppings of your choice before serving.
Notes
Press the crust firmly and chill well to avoid cracks. Store in the fridge for up to 4 days or freeze for longer storage.
