Description
Rustic, golden, and bursting with fruit flavor, these Mini Fruit Galettes are the perfect single-serve dessert. Easy to customize, freezer-friendly, and ideal for entertaining or everyday indulgence.
Ingredients
2 discs flaky or all-butter pie dough (homemade or store-bought)
2½ cups (350–400g) mixed berries (e.g., strawberries, blackberries)
1 tbsp (8g) cornstarch
2 tbsp (25g) granulated sugar
1 tsp lemon juice or vanilla extract
2 tbsp (30ml) whole milk, for brushing
Optional: Coarse sugar and/or chopped nuts for topping
Instructions
Prepare and chill pie dough at least 2 hours ahead.
Preheat oven to 375°F (191°C).
In a bowl, combine berries, cornstarch, sugar, and lemon juice or vanilla. Chill.
Roll dough to 12-inch circle. Cut 5.5–6″ rounds. Repeat with second disc.
Spoon ¼ cup filling into center of each round, leaving juices behind. Fold edges over filling.
Brush edges with milk. Sprinkle with sugar or nuts if using.
Chill assembled galettes for at least 20 minutes.
Bake 25–28 minutes, or until golden. Cool 5 minutes before serving.
Notes
Use fresh or thawed, well-dried frozen fruit.
Chill unbaked galettes up to 4 hours in advance.
Baked galettes can be frozen for 3 months.
Try seasonal variations: apple-cranberry, peach-blueberry, etc.
Serve plain or with whipped cream, ice cream, or crème fraîche.
