- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 cup unsweetened applesauce
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 1 cup butter, softened
- 4 cups powdered sugar
- 1/4 cup eggnog
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, baking powder, baking soda, spices, and salt.
- In another bowl, whisk together applesauce, oil, eggs, and buttermilk.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy, then gradually add powdered sugar.
- Mix in eggnog and vanilla until smooth and fluffy.
- Once the cakes are cooled, frost the top of one layer, place the second layer on top, and frost the top and sides of the entire cake.
- Decorate as desired and serve.
Notes
Store the cake in a cool place. If necessary, refrigerate to keep the frosting firm.
