Description

A cozy, moist cake filled with warm spices and topped with creamy eggnog frosting that brings holiday flavors to your table.


Ingredients

  • 1 1/2 cups granulated sugar
  • 1 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 1/4 cup eggnog
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, spices, and salt.
  3. In another bowl, whisk together applesauce, oil, eggs, and buttermilk.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  8. For the frosting, beat the softened butter until creamy, then gradually add powdered sugar.
  9. Mix in eggnog and vanilla until smooth and fluffy.
  10. Once the cakes are cooled, frost the top of one layer, place the second layer on top, and frost the top and sides of the entire cake.
  11. Decorate as desired and serve.

Notes

Store the cake in a cool place. If necessary, refrigerate to keep the frosting firm.
