Description

A luscious, creamy no‑bake cheesecake infused with ripe avocado, lime, and a touch of natural sweetness. Perfect for summer gatherings or a healthy dessert fix—no oven required!


Ingredients

  • Crust

    • 1½ cups graham cracker crumbs

    • ½ cup unsalted butter, melted

    • 2 Tbsp brown sugar (optional)

  • Filling

    • 2 ripe avocados (Hass recommended)

    • 8 oz cream cheese, softened

    • ½ cup Greek yogurt (or coconut yogurt)

    • ½ cup honey or maple syrup

    • ¼ cup fresh lime juice

    • 1 tsp vanilla extract

    • Pinch of salt


Instructions

  • Make the crust: Mix graham crumbs, melted butter, and brown sugar. Press into a 9″ springform pan and chill.

  • Blend filling: In a blender or food processor, combine avocado, cream cheese, yogurt, honey/maple, lime juice, vanilla, and salt. Blend until silky.

  • Taste & adjust: Sweeten or add lime until perfectly balanced.

  • Pour & smooth: Pour filling over crust and smooth evenly.

  • Chill: Refrigerate for at least 4 hours, preferably overnight.

 

  • Serve: Run a warm knife around edges, slice, and garnish with lime zest, berries, or mint.

Ripe avocado tip: Should yield slightly when pressed.

Chill time: Longer chilling (overnight) = neater slices.

Vegan swap: Use plant-based cream cheese + coconut yogurt + maple syrup.
