Ingredients
Crust
1½ cups graham cracker crumbs
½ cup unsalted butter, melted
2 Tbsp brown sugar (optional)
Filling
2 ripe avocados (Hass recommended)
8 oz cream cheese, softened
½ cup Greek yogurt (or coconut yogurt)
½ cup honey or maple syrup
¼ cup fresh lime juice
1 tsp vanilla extract
Pinch of salt
Instructions
Make the crust: Mix graham crumbs, melted butter, and brown sugar. Press into a 9″ springform pan and chill.
Blend filling: In a blender or food processor, combine avocado, cream cheese, yogurt, honey/maple, lime juice, vanilla, and salt. Blend until silky.
Taste & adjust: Sweeten or add lime until perfectly balanced.
Pour & smooth: Pour filling over crust and smooth evenly.
Chill: Refrigerate for at least 4 hours, preferably overnight.
Serve: Run a warm knife around edges, slice, and garnish with lime zest, berries, or mint.
Notes
Ripe avocado tip: Should yield slightly when pressed.
Chill time: Longer chilling (overnight) = neater slices.
