These no-bake carrot cake bites are the perfect healthy treat—soft, chewy, and loaded with cozy spices, natural sweetness, and real whole-food ingredients. They’re vegan, gluten-free, and ready in minutes—no oven required!
Ingredients
1 cup finely shredded carrots
1 cup medjool dates, pitted
¾ cup raw walnuts or pecans
½ cup shredded unsweetened coconut
1 tsp ground cinnamon
¼ tsp ground ginger
1 tsp vanilla extract
Pinch of sea salt
Optional:
2 tbsp almond or cashew butter
1–2 tbsp rolled oats
Chia seeds, flax meal, or hemp hearts
Crushed pineapple or raisins for variation
Instructions
Peel and finely shred the carrots. Soak dates in warm water if they’re dry.
In a food processor, pulse the nuts and coconut until finely ground.
Add carrots, dates, cinnamon, ginger, vanilla, and salt. Blend into a sticky dough.
Add nut butter if too dry, or oats if too sticky.
Scoop and roll into balls. Coat with coconut or nuts, if desired.
Chill for at least 30 minutes before serving.
Notes
Store in an airtight container in the fridge for up to 7 days.
Freeze for up to 2 months.
Great for kids’ lunches, post-workout snacks, or holiday platters.
Easily made nut-free by swapping in sunflower or pumpkin seeds.
