- 1/3 cup Unsweetened Cocoa Powder (Dutch-processed yields milder taste)
- 1 teaspoon Baking Soda (essential for cookie rise)
- 1 pinch Salt (omit for low-sodium diet)
- 1 cup Semi-Sweet Chocolate Chips (dark chocolate chunks can be used)
- 1/2 cup Crushed Peppermint Candies or Candy Canes (chocolate-coated mints are a sweet alternative)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or use a silicone mat.
- In a large bowl, beat the softened unsalted butter with granulated sugar and brown sugar until smooth and slightly fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract and peppermint extract.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually add the dry mix to the wet mix, stirring until just combined. Do not overmix.
- Fold in chocolate chips. Chill dough for 15–30 minutes if it seems too soft.
- Scoop cookie dough by tablespoon onto the baking sheet. Press each ball gently to flatten slightly.
- Sprinkle crushed peppermint on top of each dough ball.
- Bake for 9–12 minutes until the edges set and the center is soft.
- Let cookies cool on the sheet for 5 minutes before transferring to a cooling rack.
Notes
Chill the dough for thicker cookies and watch the bake time to prevent overbaking.
