Description

Rich, fudgy brownies topped with dark chocolate ganache and swirls of peppermint.


Ingredients

  • 1 cup unsalted butter
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup dark chocolate chips
  • 1 cup white chocolate chips
  • 1/2 cup crushed peppermint candy
  • 1/2 cup heavy cream
  • 1 cup dark chocolate (for ganache)
  • 1/4 teaspoon peppermint extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt the butter in a saucepan over low heat. Remove from heat and stir in sugar, eggs, and vanilla.
  3. In a separate bowl, combine flour, cocoa powder, salt, and baking powder. Gradually add this dry mixture to the wet ingredients until just combined. Fold in dark chocolate chips.
  4. Pour the batter into the prepared baking pan and spread evenly. Bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs.
  5. For the ganache, heat the heavy cream in a saucepan until just boiling. Remove from heat and add the dark chocolate, stirring until smooth. Add peppermint extract and let cool slightly.
  6. Once brownies are cool, pour the ganache over the top.
  7. Melt white chocolate in a microwave-safe bowl, then swirl it over the ganache.
  8. Sprinkle crushed peppermint candy on top.
  9. Let set before slicing into squares.

Notes

Serve slightly chilled or at room temperature; can also be topped with vanilla ice cream or whipped cream.
