- 1 box yellow cake mix
- 1 cup crushed pineapple (drained)
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup shredded coconut
- 1 cup chopped walnuts or pecans (optional)
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large mixing bowl, combine the yellow cake mix, crushed pineapple, eggs, and vegetable oil. Mix until well combined.
- Fold in shredded coconut and chopped nuts if using.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the frosting by whisking together powdered sugar, milk, and vanilla extract until smooth.
- Once the cake is done, allow it to cool before frosting it.
- Drizzle the frosting over the cooled cake and serve.
Notes
Store the cake covered at room temperature for 1-2 days or in the fridge for up to 5 days. Can be frozen for up to 2 months.
