Description

A simple, sweet cake bursting with pineapple flavor, perfect for gatherings and quick desserts.


Ingredients

  • 1 box yellow cake mix
  • 1 cup crushed pineapple (drained)
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup shredded coconut
  • 1 cup chopped walnuts or pecans (optional)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the yellow cake mix, crushed pineapple, eggs, and vegetable oil. Mix until well combined.
  3. Fold in shredded coconut and chopped nuts if using.
  4. Pour the batter into the prepared baking dish and spread it evenly.
  5. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the frosting by whisking together powdered sugar, milk, and vanilla extract until smooth.
  7. Once the cake is done, allow it to cool before frosting it.
  8. Drizzle the frosting over the cooled cake and serve.
