Ingredients
2 cups (250g) all-purpose flour, spooned & leveled
1/2 cup (100g) granulated sugar
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/2 cup (113g) unsalted butter, frozen
1/2 cup (120ml) heavy cream or buttermilk (plus 2 Tbsp for brushing)
1 large egg
1 1/2 teaspoons pure vanilla extract
1–1.5 cups add-ins (chocolate chips, berries, nuts, etc.)
Optional: coarse sugar for topping
Instructions
Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, salt, and baking powder.
Grate frozen butter into the dry mixture. Toss and cut in until pea-sized crumbs form.
In a separate bowl, whisk cream (or buttermilk), egg, and vanilla.
Pour wet ingredients over dry, add mix-ins, and gently combine. Avoid overmixing.
Shape into an 8-inch disc for large scones or two 5-inch discs for smaller scones. Cut into wedges.
Place scones on baking sheet, brush with cream, and sprinkle with coarse sugar if desired.
Chill in the refrigerator for 15 minutes before baking.
Bake for 18–26 minutes, until golden brown. Cool slightly before serving.
Notes
Freezing before baking: Freeze shaped dough for 1 hour, then store in freezer bags. Bake from frozen, adding a few extra minutes.
Flavor variations: Try blueberry-lemon, cheddar-chive, or cinnamon-apple.
Avoid over-spreading: Keep butter and dough cold at all times.
