Ingredients
1 cup (255g) natural creamy peanut butter (xylitol-free)
3/4 cup (180ml) skim milk
1 large egg (or 1/4 cup unsweetened applesauce)
1 large carrot, shredded (or 2/3 cup shredded baby carrots)
2 1/4 cups (290g) whole wheat flour, spooned and leveled
1 tablespoon baking powder
1/3 cup (28g) rolled oats or quick oats
Instructions
Preheat oven to 325°F (163°C). Line 2 large baking sheets with parchment or silicone mats.
In a large bowl, mix peanut butter, milk, egg (or applesauce), and shredded carrot until combined.
Add flour and baking powder. Stir until a thick dough forms. Mix in oats.
Transfer dough to a floured surface. Roll out to 1/4-inch thick and cut into shapes using cookie cutters.
Arrange on baking sheets. Bake 15 minutes, flip, and bake 10 more minutes. For crunchier treats, bake an extra 5 minutes.
Cool completely on a wire rack before serving. Store in an airtight container or freeze for up to 2 months.
Notes
For egg-free: use 1/4 cup unsweetened applesauce.
For grain-free: substitute oat flour or brown rice flour.
Store at room temp up to 1 week or freeze for longer freshness.
Avoid peanut butter with xylitol or artificial sweeteners.
