Description

These festive cookies combine soft dough with chocolate chips, white chocolate, and a touch of peppermint, perfect for any winter occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  2. Cream butter and both sugars until light.
  3. Add eggs and vanilla, and beat until smooth.
  4. Whisk flour, baking soda, and salt together.
  5. Add dry mix into wet mix and stir until combined.
  6. Fold in semi-sweet and white chocolate chips, then fold in crushed peppermint.
  7. Scoop dough onto sheets and bake for 9–12 minutes until edges are light golden.
  8. Cool briefly on the sheet, then transfer to a wire rack to cool completely.

Notes

Store cooled cookies at room temperature in an airtight container for 4 to 5 days. They can also be frozen for up to 3 months.
