Ingredients

  • 2 ripe bananas (sliced)
  • 1/4 cup brown sugar
  • 1/4 cup rum
  • 1/4 teaspoon cinnamon
  • Vanilla ice cream (for serving)

Instructions

  1. Prepare the crepe batter by whisking together the eggs, flour, milk, sugar, vanilla extract, and melted butter until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of the batter into the skillet and cook for 1-2 minutes until golden brown.
  3. Make the banana foster filling by cooking sliced bananas, brown sugar, rum, and cinnamon in another skillet for 2-3 minutes until bubbling.
  4. Assemble the crepes by placing one on a plate, topping with banana mixture, folding over, and adding a scoop of vanilla ice cream.
