- 2 cups grated carrots
- 1 cup all-purpose flour (or gluten-free flour)
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped walnuts or pecans (optional)
- Vegan cream cheese for frosting
Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- Mix the wet ingredients in a bowl: grated carrots, granulated sugar, vegetable oil, and applesauce, until well combined.
- Combine dry ingredients in another bowl: flour, baking soda, baking powder, ground cinnamon, nutmeg, and salt.
- Combine the wet and dry mixtures gradually, stirring gently until just combined. If using nuts, fold them in.
- Bake the cake for about 25-30 minutes or until a toothpick inserted comes out clean.
- Cool completely in the pan, then transfer to a plate and frost with vegan cream cheese frosting.
Notes
Store in an airtight container at room temperature for up to 3 days or refrigerate for about a week. Freeze slices for later enjoyment.
