Description

A classic New York Cheesecake with a rich and creamy texture, featuring a buttery graham cracker crust.


Ingredients

  • 180 g Graham crackers (or 12 rectangle sheets)
  • 2 Tablespoons Granulated sugar
  • 100 g Unsalted butter
  • Some Additional unsalted butter to coat on a pan
  • 905 g Full-fat Cream cheese
  • 250 g Granulated sugar
  • 250 g Sour cream
  • 180 g Heavy cream
  • 16 g Cornstarch
  • 50 g Egg yolk
  • 165 g Whole egg
  • 2 teaspoons Vanilla extract
  • 2 teaspoons Lemon juice (Adjust as you like)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Grease a springform pan with unsalted butter.
  3. Crush the graham crackers into fine crumbs.
  4. Combine the crushed graham crackers and granulated sugar.
  5. Melt the unsalted butter and mix it with the cracker mixture.
  6. Press this mixture into the bottom of the springform pan.
  7. Bake for about 10 minutes until lightly golden.
  8. Beat the cream cheese until smooth.
  9. Add granulated sugar and combine.
  10. Mix in sour cream, heavy cream, cornstarch, egg yolk, whole egg, vanilla extract, and lemon juice.
  11. Pour the filling over the cooled crust.
  12. Bake for 60 to 70 minutes until the center is slightly wobbly.
  13. Turn off the oven and leave the cheesecake inside for another hour.
  14. Cool completely at room temperature before refrigerating.
  15. Chill for at least 4 hours or overnight.

For best results, ensure all ingredients are at room temperature and avoid overmixing to prevent cracks.
