A classic New York Cheesecake with a rich and creamy texture, featuring a buttery graham cracker crust.

- 180 g Graham crackers (or 12 rectangle sheets)
- 2 Tablespoons Granulated sugar
- 100 g Unsalted butter
- Some Additional unsalted butter to coat on a pan
- 905 g Full-fat Cream cheese
- 250 g Granulated sugar
- 250 g Sour cream
- 180 g Heavy cream
- 16 g Cornstarch
- 50 g Egg yolk
- 165 g Whole egg
- 2 teaspoons Vanilla extract
- 2 teaspoons Lemon juice (Adjust as you like)
Instructions
- Preheat your oven to 180°C (350°F).
- Grease a springform pan with unsalted butter.
- Crush the graham crackers into fine crumbs.
- Combine the crushed graham crackers and granulated sugar.
- Melt the unsalted butter and mix it with the cracker mixture.
- Press this mixture into the bottom of the springform pan.
- Bake for about 10 minutes until lightly golden.
- Beat the cream cheese until smooth.
- Add granulated sugar and combine.
- Mix in sour cream, heavy cream, cornstarch, egg yolk, whole egg, vanilla extract, and lemon juice.
- Pour the filling over the cooled crust.
- Bake for 60 to 70 minutes until the center is slightly wobbly.
- Turn off the oven and leave the cheesecake inside for another hour.
- Cool completely at room temperature before refrigerating.
- Chill for at least 4 hours or overnight.

For best results, ensure all ingredients are at room temperature and avoid overmixing to prevent cracks.
