  • 1/4 cup all-purpose flour (30 grams)
  • 1/2 cup brown sugar (100 grams)
  • 1/4 teaspoon salt
  • 32 ounces cream cheese, at room temperature (900 grams)
  • 1/2 cup sour cream (120 grams)
  • 2 teaspoons vanilla extract
  • 4 large eggs, room temperature
  • 2 cups fresh blueberries (300 grams), washed
  • 1/2 cup powdered sugar (70 grams)
  • 1 to 2 tablespoons water

Instructions

  1. Make the crust: Combine the graham cracker crumbs, granulated sugar, and melted butter in a bowl. Mix until moistened. Press into a 9-inch springform pan. Bake at 325°F (163°C) for about 8 minutes. Set aside to cool.
  2. Prepare the streusel: In another bowl, mix the flour, brown sugar, salt, and melted butter until crumbly. Chill in the fridge.
  3. Make the cheesecake batter: Beat together the cream cheese and granulated sugar until smooth. Incorporate the sour cream, additional flour, salt, and vanilla.
  4. Add the eggs one at a time, mixing until just combined each time.
  5. Combine the cheesecake batter with the cooled crust. Spread evenly and sprinkle blueberries on top.
  6. Add the streusel topping and bake for 1 hour to 1 hour and 20 minutes until golden brown.
  7. Cool in the oven: Turn off the oven, crack the door, and let the cheesecake cool for 1 hour.
  8. Chill the cheesecake for 4 to 6 hours in the fridge.
  9. Make the icing by whisking powdered sugar and water until smooth.
  10. Serve with icing drizzled on top.
