Instructions
- Preheat the oven to 350°F (175°C).
- Combine the peanut butter, brown sugar, granulated sugar, and egg in a large mixing bowl.
- Mix well until the mixture is smooth and creamy.
- Add in the rolled oats, baking soda, vanilla extract, and salt.
- Stir until everything is well combined.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
- For freezing, portion the dough into balls and freeze until solid.
Notes
Use natural peanut butter for a healthier option. Do not overmix the dough to keep cookies soft.
