- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup melted dark chocolate
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust: In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Mix until the mixture resembles wet sand. Press it firmly into the bottom of a springform pan.
- Make the filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add the sugar and mix until well combined.
- Add the vanilla extract to the mixture. Then, add the eggs one at a time, mixing well after each addition.
- Incorporate the sour cream and melted dark chocolate until the batter is smooth and creamy.
- Combine the cheesecake filling over the prepared crust in the springform pan, spreading it evenly.
- Bake for 50-60 minutes, until the center is set but slightly jiggly.
- Cool inside the oven with the door slightly open for about 1 hour.
- Chill in the refrigerator for at least 4 hours or overnight before serving.
