Ingredients

  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup melted dark chocolate

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust: In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Mix until the mixture resembles wet sand. Press it firmly into the bottom of a springform pan.
  3. Make the filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add the sugar and mix until well combined.
  4. Add the vanilla extract to the mixture. Then, add the eggs one at a time, mixing well after each addition.
  5. Incorporate the sour cream and melted dark chocolate until the batter is smooth and creamy.
  6. Combine the cheesecake filling over the prepared crust in the springform pan, spreading it evenly.
  7. Bake for 50-60 minutes, until the center is set but slightly jiggly.
  8. Cool inside the oven with the door slightly open for about 1 hour.
  9. Chill in the refrigerator for at least 4 hours or overnight before serving.
